Cracked Wheat Salad with Nectarines, Parsley & Pistachios

Taken from Cooking Light (June 2010)

Ingredients:
1 cup uncooked bulgur
1 cup boiling water
1.5 cups thinly sliced nectarines (about 3)
1/2 cup thinly sliced green onions
1/4 cup chopped fresh flat leaf parsley
1 tablespoon chopped fresh dill
3 tablespoons EVOO
3 tablespoons white balsamic vinegar
3/4 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons chopped pistachios

Directions:
1.  Combine bulgur and 1 cup boiling water in a large bowl.  Cover & let stand 1 hour. 
2.  Stir in remaining ingredients except nuts and toss well
3.  Sprinkle top with nuts

Yields 6 servings of about 3/4 cup each serving
