Mocha Mousse (from Cal-A-Vie Living)

Prep time:  10 minutes
Cook time:  5 minutes, plus 20 minutes cooling
Serves:  6

Ingredients:
2 Tbsp Kahlua
1 Tbsp instant coffee granules
24 oz light extra firm silken tofu
1/2 cup baking cocoa
1/2 cup pure maple syrup
1 Tbsp vanilla extract
1 Tsp ground cinnamon
Raspberries and fresh mint for garnish (optional)

Instructions:
1.  Heat the Kahlua in a small saucepan.  Add coffee granules and stir to dissolve completely. Combine tofu with the cocoa, maple syrup, vanilla and cinnamon in a food processor fitted with metal blade.

2.  Add the coffee mixture and process for 7-10 minutes until thick and smooth.  Spoon into a bowl 6 single serving bowls and chill for 20 minutes.

Per serving nutrition:  156 calories, 2g fat (1g sat fat), 9g protein, 27g carbs, 3g fiber, 116mg sodium
