Mustard-Dill Tortellini Salad with Asparagus

Taken from

2 cups tortellini, cheese
8 spears asparagus, trimmed
1 cup grape tomatoes, halved
1/4 cup white wine vinegar
1 tbsp dried dill (chopped)
1 tbsp dijon mustard
1 clove garlic (crushed)
1 tsp sugar
1/2 cup olive oil

1.  Cook tortellini according to package directions. Cut asparagus into 1 inch pieces and add during the last 2 minutes of cooking.  Drain tortellini and asparagus
2.  Make dressing by whisking together white wine vinegar, dill, dijon, garlic and sugar.  Slowly add olive oil and whisk until combined.  Season to taste with salt & pepper
3.  Toss tortellin, asparagus, grape tomatoes and dressing.  Let chill.
