Sun-Dried Tomato Aioli (Cooking Light June 2010)

Taken from Cooking Light June 2010 issue

Ingredients:
10 Sun Dried Tomatoes, packed without oil
1 Cup Water
1/4 Cup Canola Mayonnaise
1/4 Tsp black pepper
1 garlic clove

Directions:
1.  Place sun-dried tomatoes and 1 cup water in a microwave-safe bowl; microwave on HIGH 2 minutes.  Let stand for 3
minutes
2.  Drain tomatoes and place tomatoes, mayo, pepper and garlic in a mini food processor; pulse 10 times or until tomatoes are finely chopped.

Makes 4 servings (1 tablespoon equals a serving)
